Thaumatin Sweetener & Flavour Modifier
Create balanced sweetness with a plant-derived protein from the West African katemfe fruit. Hibiscus Solutions supplies the Natex UK Sweetence® ThaumActive® range with local documentation, sampling and application support.
High-intensity sweetness with flavour-balancing potential
Thaumatin is not simply a natural sweetener. Used at very low levels, it can add sweetness, soften bitterness and help round the flavour of a finished product. The best result depends on the recipe and process, so application testing matters.
Intense sweetness
Thaumatin is commonly known to be 2,000–3,000 times sweeter than sucrose by weight. The perceived strength depends on the product and use level.
Flavour balance
Thaumatin can help reduce bitter, metallic or sharp notes and support a fuller sweetness profile, especially as part of a carefully designed blend.
Very low use levels
Normally only a small amount is needed, making the energy contribution negligible in many finished applications. Any nutrition or “no added sugar” claim must still be checked for the complete product.
What is thaumatin?
Thaumatin is a group of sweet-tasting proteins obtained from the arils around the seeds of the katemfe fruit, *Thaumatococcus daniellii*. The plant is native to tropical West Africa.
In Australia and New Zealand, thaumatin is identified as food additive 957. Depending on what it does in the recipe, it may be used as an intense sweetener or flavour enhancer.
Thaumatin - the modulator, not just another sweetener
Unlike natural sweeteners such as monk fruit, steviol glycosides, thaumatin is a protein, it delivers sweetness by a completely different mechanism, it delivers a rounded, delayed sweetness with none of the sharp onset of high-intensity sweeteners.
Sweetness is only half the story. At low inclusion levels thaumatin works as a flavour enhancer and bitter blocker, masking the metallic and lingering off-notes that stevia, monk fruit, caffeine, minerals, and plant proteins leave behind. It rounds the profile, extends sweetness perception, and adds mouthfeel and savoury depth.
The result: cleaner-tasting reformulations, lower sweetener loadings, and a shorter, more natural label.
Identity, documentation and traceability matter
When an ingredient is used at minuscule levels, visual checks or a taste test cannot be relied on alone. Reliable sourcing should give your quality and product-development teams a clear technical trail.
Responsible supply documentation may include:
- positive test results for protein being present
- a current manufacturer specification
- a batch-specific certificate of analysis
- manufacturer and batch traceability
- relevant purity, microbiological and contaminant limits
- origin or manufacturing information
- storage and shelf-life guidance; and
- appropriate quality or food-safety documentation.
If identity is disputed, use an appropriately accredited independent laboratory and agree on a suitable protein identity method before testing. A certificate or sweet taste alone is not conclusive.
Ready-to-use thaumatin solutions from Natex UK
Natex have designed and developed the Sweetence® ThaumActive® natural sweetener range using proprietary patented technology which modifies and applies thaumatin to other natural sweeteners to create consistent ready to use sweeteners.
Product Benefits:
- easier blending and rapid dissolution
- balanced sweetness without adding an additional sweetener
- product-specific heat and PH resistance
- consistent, optimised blends and
- manufactured in the United Kingdom
The exact composition, suitability and performance depend on the selected grade and application. Ask Hibiscus Solutions for the current Natex specification and trial guidance.
Where can thaumatin be used?
Beverages
Support reduced-sugar sweetness and help round acid, botanical, mineral or high-intensity sweetener notes.
Dairy and plant-based products
Build a fuller sweetness profile and help balance protein, cocoa, coffee or plant-derived flavours.
Nutrition powders and nutraceuticals
Help manage bitterness or lingering functional-ingredient notes in protein, vitamin, mineral and botanical systems.
Confectionery and functional foods
Add high-intensity sweetness where the full texture and process have been designed for lower sugar.
Flavours and specialist formulations
Use as a flavour modifier in selected flavour, pharmaceutical and other specialist applications, subject to the rules that apply to the final product.
Need formulation support?
Get more from Thaumatin with practical formulation guidance
Thaumatin is highly effective, but it is not a simple one-for-one sugar replacement. Its performance depends on the product, flavour system, other sweeteners, processing conditions and the sensory result you want to achieve.
Hibiscus Solutions can support your product-development team with:
- Assessing whether Thaumatin is suitable for your application
- Guidance on starting use levels and formulation trials
- Sweetness enhancement and flavour balancing
- Masking bitter, metallic or undesirable flavour notes
- Integrating Thaumatin with other sweeteners and flavour systems
- Technical documentation, regulatory and claims guidance
- Troubleshooting and optimisation of existing formulations
Whether you are developing a beverage, nutraceutical powder, confectionery product, dairy application or specialist formulation, our Food Technology team can help reduce trial and error and move your product forward with greater confidence.
Frequently asked questions about thaumatin
What is thaumatin?
Thaumatin is a group of intensely sweet proteins obtained from the katemfe fruit, Thaumatococcus daniellii. It can be used as a flavour enhancer, and sweetness ehnhancer when used in combination with other sweeteners.
Where does thaumatin come from?
The traditional source is the aril around the seeds of katemfe fruit. The plant is native to tropical West Africa.
How sweet is thaumatin?
It is commonly described as 2,000–3,000 times sweeter than sucrose by weight. The exact perceived intensity changes with concentration, recipe and other flavours.
Is thaumatin a sugar?
No. Thaumatin is a naturally sweet protein. It creates sweetness without providing the bulk and other functional properties of sugar.
Is thaumatin calorie-free?
As a protein, thaumatin has an energy value. However, it is normally used at such low levels that its energy contribution is negligible in many finished products. Any calorie or nutrition claim must be assessed for the complete product.
Can thaumatin replace sugar one-for-one?
No. It can replace some sweetness, but not sugar’s bulk, body, browning, crystallisation, water activity or preservation effects. The wider formulation usually needs adjustment.
Why is thaumatin used as a flavour enhancer?
At low levels, thaumatin can soften bitter, metallic or sharp notes and extend sweetness. Its effect depends on the complete flavour system.
Is thaumatin heat stable?
Thaumatin is stable under pasteurisation and UHT conditions. It is stable under acidic conditions to lower than pH 2.
Is thaumatin permitted in New Zealand and Australia?
Thaumatin is listed as additive 957 in the Australia New Zealand Food Standards Code. It may be used at good manufacturing practice where the relevant food category permits it. Always check the current category permission and finished-product requirements.
How is thaumatin shown on an ingredient list?
The declaration depends on its purpose in the final product. The appropriate class name is generally followed by the additive name or number—for example, `sweetener (957)` for a sweetening use. Confirm the wording for the actual formulation and market.
How can I check the identity and quality of a thaumatin product?
Ask for a current manufacturer specification, lot-specific certificate of analysis, batch traceability and relevant quality documentation. If identity is disputed, an appropriately accredited independent laboratory should select and perform a suitable protein identity test.
Can Hibiscus Solutions help with a trial?
Yes. Tell us about the product, target sweetness, flavour challenge, process, country and current sweetener system. We can help identify a suitable Natex grade and plan the next trial.
