Thaumatin is not simply a natural sweetener. Used at very low levels, it can add sweetness, soften bitterness and help round the flavour of a finished product. The best result depends on the recipe and process, so application testing matters.

What is thaumatin?

Thaumatin is a group of sweet-tasting proteins obtained from the arils around the seeds of the katemfe fruit, *Thaumatococcus daniellii*. The plant is native to tropical West Africa.

In Australia and New Zealand, thaumatin is identified as food additive 957. Depending on what it does in the recipe, it may be used as an intense sweetener or flavour enhancer.

Thaumatin - the modulator, not just another sweetener

Unlike natural sweeteners such as  monk fruit, steviol glycosides, thaumatin is a protein, it delivers sweetness by a completely different mechanism, it delivers a rounded, delayed sweetness with none of the sharp onset of high-intensity sweeteners.

Sweetness is only half the story. At low inclusion levels thaumatin works as a flavour enhancer and bitter blocker, masking the metallic and lingering off-notes that stevia, monk fruit, caffeine, minerals, and plant proteins leave behind. It rounds the profile, extends sweetness perception, and adds mouthfeel and savoury depth.

The result: cleaner-tasting reformulations, lower sweetener loadings, and a shorter, more natural label.

Identity, documentation and traceability matter

When an ingredient is used at minuscule levels, visual checks or a taste test cannot be relied on alone. Reliable sourcing should give your quality and product-development teams a clear technical trail.
